Amarone della Valpolicella - Ca' dei Ronchi
The Amarone della Valpolicella DOCG by Ca' dei Ronchi is the highest expression from a small artisan Veronese winery that has built its reputation on genuine quality and respect for the territory — the same estate that produces the Valpolicella Ripasso and the Spargola Superiore cru, and that with this Amarone demonstrates its ability to reach the top of the appellation without losing the artisan character that sets it apart.
Ca' dei Ronchi tends its vineyards on the calcareous-clay soils of the Valpolicella with a family approach respectful of local traditions. For the Amarone, the selected Corvina, Corvinone and Rondinella grapes are laid on traditional drying racks in the fruttaio and left to dry for over 90 days — the most critical and defining phase of production — losing over 35% of their weight and naturally concentrating sugars, polyphenols and aromas. Fermentation is slow and prolonged, and ageing takes place in large Slavonian oak barrels for the time necessary to develop complexity and integrate the tannins into a complete harmony.
The style is classic and territorial — far from modern, heavily oaked Amarones and close to the most authentic Veronese tradition. On the nose it is clean and well-defined: black cherry and morello jam, plum, bitter cacao, tobacco, dried violet, warm spice and a mineral and balsamic base typical of Valpolicella soils. On the palate it is enveloping and structured, with present but already well-integrated tannins from the ageing, a harmonious glyceric sweetness, a fresh acidity that guarantees longevity and a long, persistent finish with notes of dark fruit, spice and cacao.
