Valpolicella Classico - Ripasso - Paolo Cottini
The Valpolicella Classico Ripasso DOC by Paolo Cottini is produced using the traditional Ripasso method in the Classico zone of the Valpolicella: the wine is refermented on the still-fresh pomace of Cottini's own Classico Amarone, acquiring superior body, structure and complexity. The result is a wine that sits perfectly halfway between the freshness of the Valpolicella Classico and the power of the Amarone.
The blend is balanced and precise: Corvina 60% as the dominant aromatic backbone, Corvinone 30% for structural depth and body, Rondinella 10% for freshness and floral lift — the same varieties in slightly different proportions to the Amarone Classico, calibrated for a more approachable and immediate drinking experience. The refermentation on Amarone pomace absorbs additional tannins, residual sugars and aromatic concentration that transform the base wine profoundly while preserving its Classica identity.
The ageing sequence is thoughtful and two-stage: 18 months in barrique for initial structure, spice integration and aromatic complexity, followed by 12 months in a larger 30-hectolitre barrel that rounds and integrates the smaller wood influence into a more harmonious and territorial whole — a combination that explains the balance and depth this wine achieves at €20. Six months of bottle ageing complete the journey before release. In total almost three years from the 2022 harvest to the customer.
On the nose it expresses preserved cherry, dried plum, warm spice and a hint of chocolate. On the palate it is smooth and warm, with a fine acidity that balances the body, round tannins and a satisfying persistent finish. Outstanding quality-to-price ratio, suitable for both everyday meals and special occasions. One of the most appreciated labels in the Emporio Divino Veronese selection.
