Valpolicella Ripasso
With the "ripasso" technique, Valpolicella Doc is macerated with the pomace obtained from pressing dried grapes: the same grapes used to produce Amarone and Recioto. In this way, Valpolicella Superiore Ripasso gains in color, aroma and sugar content. It is precisely the sugary parts that lead this wine to refermentation: it thus acquires greater structure and a higher alcohol content. Recommended serving temperature: 17° centigrade. Pairing with foods: risotto with bitterness, roasts, grilled meats, boiled meats, game, mature cheeses.
