Recioto della Valpolicella
Recioto della Valpolicella comes from grapes left to dry for 120 days in ventilated rooms (called "fruttai"). It is a well-structured wine, with a minimum alcohol content of 14 degrees. The color is a rather intense garnet red. Recioto releases aromas of black cherry, sweet violet and spices (cinnamon, pepper, nutmeg). With a presence of unfermented sugar residues that can reach up to 120 grams per liter, it is sweet, velvety, warm and enveloping on the palate. A peculiarity of Recioto della Valpolicella is that it lends itself to being made into sparkling wine with excellent results. Recommended serving temperature: 14-15° centigrade. Pairing with foods: pandoro and panettone, tarts, dark chocolate, dry cakes made with almonds and walnuts, mature cheeses with mustards or jams.
