Amarone

Amarone is obtained by pressing dried grapes, such as Recioto. Unlike Recioto, however, it is aged for two to four years, obtaining in the latter case the qualification "Riserva". The long rest in the oak barrels allows the wine to exhaust the sugar residues with prolonged fermentation: it thus becomes a complex wine with its own "opulence". Amarone is a very full-bodied wine, with an alcohol content of 15-16 degrees. It has a bright garnet red color, with a strong and spicy aroma (cinnamon, walnut husk) with notes of jam. On the palate it releases a majestic, velvety, warm flavour. Amarone is today one of the most sought-after fine wines in the world. Recommended serving temperature: 17-20° centigrade. Food pairing: boiled meats also with sauce, braised meats, game.
