Soave Classico - Monte Carbonare - Suavia

The Soave Classico DOC Monte Carbonare by Suavia is one of those wines that permanently changed the world's perception of an appellation unjustly diminished by decades of industrial production. Suavia is the winery of the Tessari family in Fittà di Soave, in the heart of the Classico zone, which for over thirty years has demonstrated with rigour and passion that Soave — when born from pure Garganega on volcanic soils and vinified with artisan care — is one of Italy's truly great white wines.

Monte Carbonare is Suavia's flagship single-vineyard cru: a vineyard on basaltic soils of volcanic origin — the "black stone" that gives the hill its name — which gives the Garganega a unique, almost saline minerality and an aromatic depth that has nothing to envy the great Chablis of Burgundy. The grapes, harvested at full ripeness, ferment spontaneously with indigenous yeasts in stainless steel tanks and rest on their own fine lees for several months before bottling — a process that adds complexity and structure without altering the varietal purity.

On the nose it is extraordinarily complex for a Veronese white: fresh almond, white peach, chamomile flowers, citrus, struck flint, chalk and a characteristic bitter almond note that is the unmistakable signature of quality Garganega. On the palate it is dry and sapid, with a vibrant minerality and a precise acidity that carries the finish for an exceptionally long time and allows the wine to evolve positively in bottle for 5 to 8 years. A Soave that surprises and convinces even the most sceptical.
