Soave - Calle - Latium

The Soave DOC Calle by Ilatium is the most immediate and accessible expression of the philosophy of this small Veronese winery — the same philosophy that produces the Amarone Leon, the Amarone Due Mori and the very rare Recioto di Soave Sette Dame. Seeing Ilatium also produce a territorial Soave confirms a complete vision: expressing Verona in all its forms, from everyday white to collector's wine, always with the same artisan honesty.

"Calle" is the name of the specific parcel from which this Soave is born — a Venetian term indicating a narrow characteristic alleyway, here repurposed to name an equally precise and identity-defining vineyard on basaltic volcanic soils in the Soave DOC zone. Ilatium selects for the Calle the Garganega grapes from this specific parcel, vinifying them in stainless steel at controlled temperature with fine lees ageing to preserve all the varietal and territorial character.

On the nose it is delicate but precise: white wildflowers, white peach, fresh almond, citrus (lemon, cedar) and a characteristic mineral note of stone and basalt dust recalling the volcanic soils of the Soave. On the palate it is fresh and sapid, with a light and enveloping texture, a natural fresh acidity and a clean, persistent finish with floral and bitter almond notes. An artisan producer's Soave — not the industrial large-distribution Soave, but the kind that Veronese people drink when they want something real.
