The Amarone della Valpolicella DOCG Due Mori by Ilatium is the flagship wine of this Veronese winery — the most ambitious and representative selection born from the union of the grapes from the estate's two historic vineyards, whose names are jealously guarded as part of the producer's deepest identity. "Due Mori" — the two mulberry trees, once a symbol of the Veronese agricultural landscape — evokes an ancient rural setting and a viticultural tradition rooted in centuries of history.

Ilatium is a small artisan estate in the Valpolicella that works with a precise and consistent vision: to express the territory with honesty and depth, without yielding to the stylistic trends that have homogenised many Amarones in recent decades. The Due Mori represents the culmination of this vision — the wine in which the finest Corvina, Corvinone and Rondinella grapes from the two reference vineyards are united in a single expression of complexity and character.

The traditional fruttaio appassimento lasts over 90 days, with careful grape selection ensuring uniform ripening and optimal concentration. Vinification is slow and respectful, with long fermentations in wood and concrete vessels that encourage gradual polyphenol extraction without excess. Ageing takes place in large Slavonian oak barrels for a period significantly exceeding the DOCG minimum requirement, allowing the wine to develop an aromatic complexity and tannin integration that only time can guarantee.

On the nose it is rich and layered: black cherry and morello jam, dried plum, bitter cacao, pipe tobacco, dried violet, warm spice, leather and a mineral and balsamic base recalling the limestone hills of the eastern Valpolicella. On the palate it is powerful and enveloping, with massive but already extraordinarily well-integrated tannins, a glyceric sweetness that balances the alcoholic structure, a fresh acidity that provides vertical drive and an exceptionally long finish that evolves for minutes with notes of dark chocolate, liquorice and spice. An Amarone of great personality and exceptional longevity.
