The Champagne Grand Cru Tradition Brut by Aurélien Dauvergne is one of those wines that changes the way you look at the world of Champagne — not the product of a grand maison with millions of bottles and enormous advertising budgets, but that of a récoltant-manipulant from Bouzy, one of the most respected Grand Crus in all of Champagne, who grows his own vines, vinifies in his own cellar and bottles under his own name. The difference between a maison Champagne and a grower Champagne is the same as that between an industrial wine and an artisan wine — only in the world of Champagne this distinction is even less widely known than it deserves to be.
Aurélien Dauvergne works in Bouzy, a village classified Grand Cru on the Montagne de Reims, historically considered one of the finest terroirs for Pinot Noir in all of Champagne. The vineyards on calcareous and chalky soils produce Pinot Noir of exceptional structure and depth — and this is immediately felt in the glass. The blend strongly favours Pinot Noir at 80%, with 20% Chardonnay contributing freshness and aromatic finesse.
Vinification is meticulous: grapes from the finest parcels are vinified separately by variety and individual parcel, then assembled into a cuvée that blends three different vintages — a technique that guarantees stylistic consistency year after year while maintaining the complexity of multiple vintages. After alcoholic and malolactic fermentation, the base wines age in stainless steel to preserve freshness, then are assembled and bottled for the second fermentation. Ageing on the lees lasts approximately 36 months — three times the minimum required for non-vintage Champagnes — developing that autolytic complexity of brioche, puff pastry and toasted dried fruit that is the signature of great artisan Champagne. After disgorgement the wine rests for further months before release.
On the nose it is elegant and layered: yellow apple, pear, candied citrus, freshly baked brioche, almond paste, white flowers and a mineral hint of chalk and flint that is the unmistakable signature of Bouzy's chalky soils. On the palate it is rich and creamy thanks to the Pinot Noir dominance — a fuller body than a Chardonnay-based Champagne, with fine and persistent bubbles, a precise fresh acidity that balances the structure and a long, satisfying finish with notes of yellow fruit, yeast and minerality. Serve at 8-10°C in a flûte or tulip glass.
At €36 for a Grand Cru grower Champagne with 36 months on lees, this represents one of the finest quality-to-price ratios in the entire Champagne category.
