Jankara's Vermentino di Gallura Superiore DOCG is one of Italy's most representative and beloved white wines - and Emporio Divino's choice to include this label in its catalog confirms an oenological vision that looks to Italy as a whole, not just Veneto or Tuscany. Vermentino di Gallura is Sardinia's only DOCG for white wines - the island's highest and most selective designation - and Jankara is one of the leading producers for this designation in the heart of Gallura, inland from Olbia.
The name "Jankara" recalls the linguistic roots of Sardinian-Gallurese — an ancient word that evokes the rugged, granite-rich, wild landscape of Gallura, the area in northeastern Sardinia characterized by soils of crumbled pink granite, dense Mediterranean scrub, and a windy, sun-drenched microclimate that gives Vermentino a concentration and aromatic personality that are difficult to replicate elsewhere. The Superiore designation indicates higher-quality grapes with a higher minimum alcohol content than basic Vermentino di Gallura DOC - and this wine's 14.5° confirm the full maturity of the grapes.
The winemaking is respectful and precise: gentle pressing of 100% pure Vermentino grapes, fermentation in stainless steel at a controlled temperature to preserve the full complexity of the varietal aromas, 6 months on fine lees in stainless steel, and 3 months in bottle. A production of 20,000 bottles ensures nationwide availability without sacrificing its artisanal, regional identity.
Vermentino di Gallura is a grape variety with a strong, immediate character - entirely unlike the delicacy of Garganega or the linearity of Soave. On the nose it is explosive and aromatic: ripe yellow peach, apricot, pineapple, orange blossom and broom, rosemary, thyme, sage, Sardinian maquis, citrus fruits (lemon, citron, bergamot), and a distinctive bitter note of bitter almond and bitter herbs that is the unmistakable signature of Vermentino di Gallura grown on granite soils. On the palate it is full, savory, and enveloping - 14.5° of naturally powerful alcohol, well integrated, a creamy, substantial texture, refreshing acidity that balances the structure, persistent, almost saline savoriness, and a long finish with notes of yellow fruit, Mediterranean herbs, and bitter almond. A white wine with the strength of a light red - one of those wines that surprise anyone expecting something simpler. Serve at 11°C.

At the end of the harvest, carried out strictly by hand during the second ten days of September, the grapes are destemmed and pressed slowly, after which the free-run juice obtained from the first gravity pressing settles statically for 24 hours. This is followed by alcoholic fermentation, which takes place in temperature-controlled stainless steel tanks (16°C) for 15-20 days, using carefully selected yeasts to bring out the wine’s sense of place to the fullest.
