Cavedini's Valpolicella Ripasso DOC is the middle wine in a range that tells the complete story of Valpolicella - from the sweetness of Recioto to the power of Amarone, passing through Ripasso, which for centuries has been the most beloved and widely consumed wine on the everyday tables of Verona.
Cavedini produces Ripasso with the same respect for tradition that distinguishes everything from its historic winery. The method is the ancient one: the Valpolicella base wine - already good in its own right and produced with artisanal care - is transferred into vats containing the still-fresh, yeast-rich pomace from the recently racked Amarone, beginning a second fermentation that lasts several days. During this process, the wine absorbs residual sugars, polyphenols, additional tannins, and aromatic concentration from the pomace, profoundly transforming it - from a fresh, light Valpolicella into a structured, enveloping Ripasso, with a complexity approaching that of the great Amarone without reaching its concentrated power.
The wine is aged in oak barrels for the time needed to integrate its acquired structure with the varietal freshness of the original Valpolicella - a delicate balance that requires experience and sensitivity. On the nose, it is warm and inviting: ripe cherry, blackberry, plum, light cocoa, sweet spices, tobacco, and a balsamic hint of aromatic herbs from Verona that recall the hills around the historic estate. On the palate, it is soft and full-bodied - round, already well-integrated tannins, a glyceric sweetness that envelops the palate, balanced acidity, and a persistent finish with notes of red fruit and sweet spices. A Ripasso with authentic character and immediate drinkability.
The ideal choice for anyone who wants to serve a quality artisanal wine at the table every Sunday without paying Amarone prices.
