Ca' del Monte's Valpolicella Classico Ripasso DOC is the wine that proves artisanal quality does not necessarily have to come at an inaccessible price - at €16, it is one of the most competitive Classico Ripasso wines on the market, selected by Emporio Divino from among the Valpolicella producers offering a quality-price ratio that is difficult to match.
Ca' del Monte is a small winery in Valpolicella Classica that produces its wines with an artisanal approach respectful of the land and local traditions. Ripasso is made using the traditional Veronese method: the base Valpolicella Classico is refermented on the still-fresh, yeast-rich pomace of Amarone that has just been drawn off, gaining structure, body, additional tannins, and an aromatic complexity that elevates it above a simple Classico. The result is the wine that people from Verona affectionately call "little Amarone" - full, soft, and with an aromatic depth that surprises for the price.
The winemaking is traditional and respectful: fermentation on Amarone pomace for several days, followed by aging in oak barrels for as long as necessary to integrate the acquired structure. On the nose, it is warm and inviting: ripe cherry, blackberry, plum, sweet spices, light tobacco, and a balsamic hint of Veronese herbs. On the palate, it is soft and enveloping, with rounded, already well-integrated tannins, a glyceric sweetness that balances the structure, lively acidity, and a persistent finish with notes of red fruit and spices. Le uve, raccolte manualmente, vengono sottoposte a una pigiatura soffice e a una lenta fermentazione a temperatura controllata in vasche di acciaio inox. Dopo circa sei mesi, il Valpolicella viene fatto rifermentare sulle vinacce dell’Amarone, secondo il tradizionale metodo del Ripasso, acquisendo maggiore struttura, complessità e profondità aromatica.
