Aurélien Dauvergne's Grand Cru Tradition Brut Champagne is one of those wines that changes the way you view the world of Champagne - not the product of a major house with millions of bottles and enormous advertising budgets, but that of a grower-producer in Bouzy, one of the most respected Grand Cru villages in all of Champagne, who cultivates his own vineyards, makes the wine in his cellar, and bottles it under his own name. The difference between a house Champagne and a grower Champagne is the same as that between an industrial wine and an artisanal wine - except that in the world of Champagne, this distinction is still less well known than it deserves to be.

Aurélien Dauvergne works in Bouzy, a Grand Cru village on the Montagne de Reims, historically considered one of the finest terroirs for Pinot Noir in all of Champagne. The vineyards' limestone and chalky soils produce Pinot Noir of exceptional structure and depth - and this is immediately apparent in the glass. The blend strongly favors Pinot Noir at 80%, with 20% Chardonnay bringing freshness and aromatic finesse.

The winemaking is meticulous: grapes from the best parcels are vinified separately by grape variety and individual parcel, then blended into a cuvée that combines three different vintages - a technique that ensures consistency of style from year to year while retaining the complexity that comes from multiple vintages. After alcoholic and malolactic fermentation, the base wines mature in steel to preserve freshness, then are blended and bottled for the second fermentation. Maturation on the lees lasts around 36 months - three times the minimum required for non-vintage Champagnes - developing the autolytic complexity of brioche, puff pastry, and toasted nuts that is the signature of great artisanal Champagnes. After disgorgement, the wine rests for several additional months before being released.

On the nose, it is elegant and layered: yellow apple, pear, candied citrus, freshly baked brioche, almond paste, white flowers, and a subtle mineral hint of chalk and flint that is the unmistakable signature of Bouzy's chalky soils. On the palate, it is rich and creamy thanks to the predominance of Pinot Noir - fuller-bodied than a Chardonnay-based Champagne, with fine, persistent bubbles, precise acidity that balances the structure, and a long, satisfying finish with notes of yellow fruit, yeast, and minerality. Serve at 8-10°C in a flute or tulip glass.

At €36 for a grower Grand Cru with 36 months on the lees, this is one of the best value-for-money offerings in the entire Champagne category.

Vinificazione

Le uve provengono dalle vigne di Chardonnay e Pinot Nero più vocate della tenuta. Le vinificazioni avvengono separatamente per vitigno e per singola parcella. Una volta terminata la duplice fermentazione alcolica e malolattica, i vini base si affinano per alcuni mesi in acciaio e poi vengono assemblati per creare la cuvée definitiva, che in questo caso è composta dalla miscelazione di vini di tre annate diverse . La seconda fermentazione si svolge in bottiglia secondo il Metodo Champenoise, con una sosta sui lieviti di almeno 36 mesi prima di procedere al dégorgement.
