La Violette is the most evocative cuvée from Domaine Philippe Cordonnier, a small artisanal producer located in the Hautes-Côtes de Nuits, the hilly area stretching west of the renowned Côte de Nuits - the land of the world's greatest Pinot Noirs, between Gevrey-Chambertin and Vosne-Romanée.

The name "La Violette" is no coincidence: it evokes the distinctive fragrance that Pinot Noir expresses on these high-altitude limestone soils, where the temperature variations between night and day preserve aromatic freshness and natural acidity. The wine matures in French oak barrels to provide structure without losing the varietal's characteristic lightness and transparency.

On the nose, it opens with disarming finesse: violet (as the name promises), red cherry, raspberry, woodland notes, and a delicate hint of sweet spices. On the palate, it is elegant, with fine, almost imperceptible tannins, vibrant freshness, and a long, mineral finish. Far from opulent, oaky styles, it is a Burgundy that tells the story of its terroir with artisanal honesty.

Vinificazione

Dopo la raccolta manuale le uve vengono trasportate immediatamente in cantina per la duplice fase di diraspatura (effettuata in percentuale variabile a seconda dell’annata) e pigiatura. Segue macerazione pre- fermentativa a freddo della durata di circa 3-4 giorni ad una temperatura di 12°C. La fermentazione alcolica viene svolta dai lieviti indigeni in vasche d'acciaio inox e dura una decina di giorni, durante i quali vengono praticati frequenti rimontaggi e follature.
