The Bourgogne Hautes-Côtes de Beaune Sous Carrière from Domaine Saint-Marc is a white Burgundy wine made from 100% Chardonnay, sourced from the hills of the Hautes-Côtes de Beaune, in the Côte de Beaune. The Sous Carrière parcel lies on rather rugged terrain, characterized by poor soils of calcareous marls and éboulis, namely deposits of limestone fragments that help give the wine freshness and a pleasant mineral imprint.
The vines are approximately 35 years and the grapes are harvested by hand, collected in small 20 kg crates. In the cellar, the bunches undergo whole-bunch pressing, followed by static settling of the must and fermentation directly in oak. Depending on the vintage, the wine is aged partly in one- or two-use barrels: a deliberate choice by Domaine Saint-Marc to add complexity without allowing the oak to overshadow the expression of the Chardonnay and the terroir.
On the nose it is fresh, fruity, and delicately floral, with hints of yellow-fleshed fruit, citrus, and white flowers, accompanied by a subtle mineral component. On the palate, it shows pleasant acidity and salinity, supported by good structure and a balanced, smooth palate. Notes of yellow fruit emerge particularly clearly, while the finish retains a characteristic freshness that invites another sip.
It is a white Bourgogne designed to be enjoyed primarily in its youth, when it best expresses its energy and immediacy. The Domaine therefore recommends drinking it within approximately 2–3 years, while some commercial sheets indicate a slightly longer aging potential.
At the table, it pairs naturally with Burgundian cuisine and fish-based preparations: shellfish and crustaceans, fish, Burgundy escargots, and jambon persillé, as well as fresh cheeses and delicate dishes. Serve at around 10–12 °C.

Le uve, dopo un'attenta selezione, vengono raccolte a mano in cassette forate da 20 kg e trasportate immediatamente in cantina per la fase di pressatura integrale. Segue decantazione statica del mosto della durata di 24 ore per eliminare le fecce eccessivamente grosse e fermentazione alcolica in botte con lieviti indigeni accompagnata da frequenti rimontaggi.

Ottimo con antipasti di mare, crostacei e molluschi, tartare e carpacci di pesce. Si abbina molto bene anche a pesci al forno o alla griglia, carni bianche delicate e preparazioni con salse cremose. Interessante con risotti ai frutti di mare, pasta con pesce e funghi, dove la sua freschezza e la struttura ne accompagnano bene la componente sapida e aromatica.
