Roccolo Grassi's Amarone della Valpolicella DOCG is one of the most celebrated and acclaimed wines of the entire Veronese appellation - and one of the main reasons why Marco Sartori's winery in Mezzane di Sotto is considered an absolute benchmark for anyone who wants to understand what Amarone can be when it comes from a rigorous artisanal vision and an extraordinarily suited terroir.
The Corvina, Corvinone, and Rondinella grapes come from the estate vineyards on the calcareous and clay soils of eastern Valpolicella. They are harvested by hand at perfect ripeness and transferred to the drying rooms for traditional appassimento. The grapes spend more than 90 days in the drying areas, losing up to 35-40% of their weight and naturally and slowly concentrating sugars, aromas, and polyphenolic structure. Fermentation is long and patient, and the wine is aged in large Slavonian oak casks for a period exceeding the minimum requirements of the DOCG regulations, allowing it to develop an aromatic complexity and depth rarely found in this style.
On the nose it is grand and layered: black cherry and sour cherry preserve, bitter cocoa, pipe tobacco, fine leather, dried violet, Oriental spices, licorice, and a characteristic mineral and balsamic undertone that is the unmistakable signature of the great Amarone wines of eastern Valpolicella. On the palate it is monumental yet not heavy - this is Roccolo Grassi's great strength - with powerful yet already extraordinarily silky tannins, a glyceric sweetness perfectly balanced by vibrant acidity, and an endless finish that evolves for more than two minutes with notes of dark chocolate, tobacco, and concentrated black fruit.

L'uva viene raccolta esclusivamente a mano durante la prima decade di ottobre e messa a riposo in fruttaio, su graticci e plateaux, per un periodo di 120 giorni. Segue fermentazione alcolica in acciaio inox, a temperatura controllata, della durata di circa 20 giorni e fermentazione malolattica completa svolta in legno.
