Ilatium's Amarone della Valpolicella DOCG Due Mori is the flagship wine of the winery from Verona - its most ambitious and representative selection, created by blending grapes from the estate's two historic vineyards, whose names are jealously guarded as part of the producer's deepest identity. "Due Mori" - the two mulberry trees, once symbols of the Veronese countryside - evokes an ancient agricultural landscape and a winemaking tradition rooted in centuries of history.
Ilatium is a small artisanal winery in Valpolicella that works with a precise and consistent vision: to express the terroir with honesty and depth, without yielding to the stylistic fashions that have made many Amarone wines alike over the past few decades. Due Mori represents the culmination of this vision - the wine in which the finest Corvina, Corvinone and Rondinella grapes from the two reference vineyards are united in a single expression of complexity and character.
The drying process in the traditional fruit-drying room lasts more than 90 days, with careful grape selection ensuring uniform ripeness and optimal concentration. Vinification is slow and respectful, with long fermentations in wooden and concrete vessels that promote the gradual extraction of polyphenols without excess. The wine is aged in large Slavonian oak casks for a period significantly longer than the minimum required by the DOCG regulations, allowing it to develop an aromatic complexity and tannin integration that only time can provide.
The nose is rich and layered: black cherry and sour cherry preserves, dried plum, bitter cocoa, pipe tobacco, dried violet, sweet spices, leather and a mineral, balsamic undertone that recalls the limestone hills of eastern Valpolicella. On the palate it is powerful and enveloping, with massive yet already extraordinarily well-integrated tannins, a glyceric sweetness that balances the alcohol structure, bright acidity that lends verticality and an exceptionally long finish that evolves for minutes with notes of dark chocolate, liquorice and spices. An Amarone of great personality and exceptional longevity.

Le migliori uve delle grandi annate, raccolte a mano durante la prima decade di ottobre, vengono selezionate rigorosamente in base all'epoca di maturazione e lasciate appassire in plateaux da 5-6 kg in ambiente a clima controllato per 100-120 giorni. Dopo la diraspatura e la pigiatura l’uva subisce una macerazione a freddo per poi cominciare una fermentazione a temperatura controllata con frequenti rimontaggi e movimentazione del pigiato.
