Cavedini's Amarone della Valpolicella DOCG comes from the same family and the same production philosophy as the Recioto della Valpolicella - together, the two wines tell the complete story of Valpolicella through its two oldest souls: sweet and dry, Recioto and Amarone, two faces of the same thousand-year-old tradition.
Cavedini is a family estate deeply rooted in the Valpolicella region, with the depth of roots that can be built only over generations. This continuity with tradition is reflected in the style of the Amarone: respectful of natural rhythms, without haste and without commercial compromises.
The Corvina, Corvinone, and Rondinella grapes are harvested by hand in the final weeks of September and early October, selected bunch by bunch, and placed in the wooden crates of the drying loft for traditional appassimento, which lasts more than 90 days in the natural drafts of the historic attics. The weight loss exceeds 35%, concentrating all the aromatic and structural potential of the grapes. Fermentation is slow and patient, and maturation takes place exclusively in large Slavonian oak casks - no barriques, no wood that overwhelms the fruit - for as long as necessary to integrate the tannins and aromas into a complete harmony.
On the nose it is classic and enveloping: black cherry jam, ripe plum, cocoa, sweet tobacco, dried violet, sweet spices (vanilla, cinnamon, cloves), and an earthy mineral undertone that speaks directly of the calcareous and clay soils from which it comes. On the palate it is warm and structured - tannins are present but already beautifully polished, with harmonious glyceric sweetness, fresh acidity that balances the body, and a long, persistent finish with notes of dried fruit, chocolate, and spices. An Amarone of great authenticity and Veronese character, expressing itself at its best between 5 and 15 years from the vintage.

L'uva viene raccolta esclusivamente a mano in plateaux da 4–5 Kg durante la seconda decade di settembre e messa a riposo in fruttaio, a condizioni di temperatura e umidità controllate, per un periodo di 90 giorni. Dopo la diraspatura, la pigiatura e una breve macerazione a freddo, segue una lenta fermentazione alcolica, con lieviti selezionati, della durata di circa 20 giorni con rimontaggi e follature automatiche giornaliere in vinificatori di acciaio inox. La fermentazione malolattica viene svolta completamente in modo naturale in tonneaux di rovere francese di primo passaggio.
