Ca' dei Ronchi's Amarone della Valpolicella DOCG is the ultimate expression of a small artisanal winery from Verona that has built its reputation on authentic quality and respect for the land — the same winery that produces Valpolicella Ripasso and the Spargola Superiore cru, and that with this Amarone proves it can rise to the pinnacle of the appellation without losing the artisanal character that sets it apart.
Ca' dei Ronchi tends its vineyards on the calcareous and clay soils of Valpolicella with a family-oriented approach that respects local traditions. For the Amarone, the selected Corvina, Corvinone and Rondinella grapes are laid on traditional racks in the drying room and left to dry for over 90 days — the most critical and decisive stage of production — losing more than 35% of their weight and naturally concentrating sugars, polyphenols and aromas. Fermentation is slow and prolonged, and the wine is aged in large Slavonian oak casks for as long as necessary to develop complexity and integrate the tannins into a complete harmony.
The style is classic and rooted in its territory — far from modern, heavily oaked Amarone wines and close to the most authentic Veronese tradition. On the nose, it is clean and well-defined: black cherry preserve, sour cherry, plum, bitter cocoa, tobacco, dried violet, sweet spices and a mineral, balsamic undertone typical of Valpolicella's soils. On the palate, it is enveloping and structured, with noticeable tannins already well integrated through ageing, harmonious glyceric sweetness, refreshing acidity that ensures longevity, and a long, persistent finish with notes of black fruit, spices and cocoa. Le uve, raccolte manualmente tra settembre e ottobre, vengono selezionate e sottoposte ad appassimento per circa tre mesi. Al termine dell'appassimento vengono pigiate e diraspate, quindi avviate alla fermentazione in vasche d'acciaio inox, con macerazione sulle bucce, continui delestage e rimontaggi per favorire l'estrazione di colore, struttura e sostanze nobili.
