The Cantorì di Accadia is a Verdicchio dei Castelli di Jesi DOCG Classico Riserva produced exclusively in the best vintages, one of the winery's most important expressions and a personal interpretation of Marche's Verdicchio. It is made from pure Verdicchio from the estate's highest vineyards, located at approximately 370 meters above sea level in Serra San Quirico, in the heart of the Classico area. Here, the predominantly sandy soils of sandstone origin, together with favorable exposure and a particularly sunny microclimate, allow the grapes to reach slow, complete ripeness.
Cantorì's production is characterized by rigorous manual selection. The grapes are harvested by hand in several passes, exclusively in the early morning hours, selecting only intact, perfectly ripe bunches. Harvest generally takes place at the end of September. In the winery, the whole bunches undergo gentle pressing, obtaining only the free-run must, which is then fermented in stainless steel at a controlled temperature.
Long aging is fundamental to Cantorì's style: the wine remains for approximately 12 months on fine lees in stainless steel and then matures for at least another 12 months in the bottle. This journey gives it greater complexity, depth, and harmony, transforming Verdicchio's natural freshness into a broader, more articulate structure.
On the palate, it is a broad, enveloping, and persistent, characterized by a perfect balance of freshness, savoriness, and structure. More mature versions can develop greater aromatic complexity while retaining the typical mineral tension and pleasant bitter finish that distinguish the grape variety. Cantorì stands out above all for its remarkable aging potential: it is a white wine intended not only to be enjoyed young, but also to be cellared and followed over time.
It is a wine to pair with structured dishes rich in flavor: baked or grilled fish, shellfish, mollusks, risottos, elaborate first courses, white meats and dishes from the Marche cuisine. Its structure and evolution make it particularly interesting at the table with more complex dishes as well.
Limited production and numbered bottles complete the exclusive character of this Riserva. Cantorì thus represents the deepest and most long-lived side of Verdicchio di Accadia: a wine that reflects its terroir, produced with great artisanal care, for those seeking a white wine capable of expressing identity, elegance, and aging potential.

Le uve provengono da vigneti allevati a spalliera con resa media di circa 70 - 75 q/ha. Dopo la raccolta manuale, la pressatura è soffice e la fermentazione avviene in acciaio ad una temperatura compresa tra 18 e 20 °C per circa 14 giorni.
