Ilatium's Valpolicella Superiore DOC Prognai is the seventh wine in a range that continues to surprise with its breadth and consistency - the cru that occupies the middle rung between the base Valpolicella and the two great Amarones, Leon and Due Mori, offering privileged access to Ilatium's complexity without requiring the financial investment and waiting time of wines made from dried grapes.
"Prognai" is the name of the specific parcel where this Valpolicella Superiore originates - a local place name referring to a plot of land with distinctive soil and microclimate characteristics, the same attachment to the land that characterizes Ilatium's entire production philosophy. The selection of the finest grapes from this vineyard, longer maceration than the base wine, and aging in oak barrels for the period required by the Superiore regulations - and beyond - give Prognai a structure and aromatic depth that place it in a quality category decidedly superior to the style.
The Corvina, Corvinone, and Rondinella grapes from the Prognai vineyard are harvested at full maturity, fermented with long macerations to extract their maximum polyphenolic and aromatic potential, and aged in oak barrels that lend the wine structure and complexity without overpowering its varietal aromas. On the nose, it is richer and more complex than the base Valpolicella: ripe cherry, blackberry, plum, sweet spices, light tobacco, aromatic herbs from the hills around Verona, and a delicate hint of well-integrated wood. On the palate, it is full and enveloping, with noticeable yet already polished tannins, an acidic freshness that balances the structure, and a persistent, medium-long finish with notes of concentrated red fruit and spices. A Valpolicella Superiore with authentic character, bearing Ilatium's unmistakable signature in every sip.

L'uva, vendemmiata durante la terza decade di settembre e la prima di ottobre, viene raccolta a mano in cassette da 5/6 kg e lasciata appassire per 25/30 giorni. Dopo la diraspatura e la pigiatura segue una fermentazione a temperatura controllata con delestage e rimontaggi di 12/15 giorni.
