Ilatium's Valpolicella DOC is the sixth wine from a winery that never stops surprising - the same winery that produces Soave Calle, the exceptionally rare Recioto di Soave Sette Dame, Amarone Leon and the monumental Amarone Due Mori. The entry-level Valpolicella is the starting point of Ilatium's quality pyramid, the wine that tells the story of the Verona area with the simplicity and freshness that only a young, artisanal red can offer.
Ilatium produces this Valpolicella according to the same philosophy that guides the entire range: respect for the land, artisanal care in the vineyard and cellar, and no compromise with industrial standardization. The Corvina, Corvinone and Rondinella grapes come from the estate vineyards on the limestone and clay soils of the Verona area of Valpolicella, harvested at full maturity and vinified with a short fermentation to preserve all the fresh, fruity character of the grape variety.
Vinification in stainless steel and brief maturation ensure aromatic fragrance and immediate drinkability, making this Valpolicella perfect for every occasion - from the everyday aperitif to a meal shared with friends, from Friday-night pizza to an impromptu dinner with friends. On the nose, it is fragrant and clean: fresh cherry, raspberry, blackberry, red flowers and a characteristic herbal hint typical of quality young Corvina. On the palate, it is light and fresh, with delicate tannins and lively acidity that make it wonderfully enjoyable to drink even slightly chilled at 14-16°C.
A wine that does not aspire to be great - it wants to be good every day. And it succeeds.

The grapes are harvested during the third ten days of September and the first ten days of October, in 4-5 q.li “bins”. After destemming and crushing, cryomaceration follows at 7-8 °C for 12/18 hours. Temperature-controlled fermentation, pump-overs and délestage during the fermentation process.
