Colle Cerè's Recioto della Valpolicella Classico DOCG is the third wine from a winery that has demonstrated, with its 2020 Amarone Classico and 2021 Ripasso La Tonega, its ability to interpret the Veronese terroir with consistency and genuine production integrity. With this 2024 Recioto, Colle Cerè completes its range by telling the story of the Veronese tradition in its oldest and sweetest form - the one that predates Amarone by centuries and still represents one of the rarest and most precious wines in the entire appellation.
Colle Cerè's 2024 Recioto Classico is a wine of great freshness and immediacy compared with other Recioto wines in the catalog - the choice to age it in stainless steel for 12 months, rather than in the wooden casks used for the Ripasso and Amarone, preserves all the aromatic vitality and varietal freshness of the dried grapes without adding oak notes that could weigh down the natural sweetness. It is a modern and respectful approach that highlights the fruit of the drying process in its purest form.
The Corvina 50%, Corvinone 40%, and Rondinella 10% grapes - the same proportions as Amarone and Ripasso La Tonega, evidence of a varietal consistency that runs throughout the range - are selected from the ripest and most concentrated grapes in the vineyard and dried for 90 days in a traditional drying room, losing more than 35% of their weight. Fermentation is precisely interrupted before all the sugars are consumed, preserving a deep, velvety natural sweetness. Aging in stainless steel for 12 months and 2 months in the bottle completes the process.
The 500ml format is the traditional choice for sweet wines made from dried grapes - more generous than a half bottle, more elegant than a full bottle, perfect for sharing between two people or as a valuable gift. 1,500 bottles produced - an absolute rarity even within Colle Cerè's already rare production.
On the nose, it is sumptuous and fragrant for the young 2024 vintage: black cherry and marasca cherry preserve, blackberry, blueberry, sweet cocoa, cinnamon, cloves, dried violet, and a fruity freshness that the stainless steel has preserved magnificently. On the palate, it is dense and velvety - deep natural sweetness that is never cloying thanks to the fresh acidity of Corvina Classica, soft, silky tannins, enveloping glyceric density, and a long, persistent finish with notes of black fruit, sweet spices, and cocoa. Serve at 14-15°C. Perfect as a dessert wine, a meditation wine, or as a luxurious artisanal gift from Verona.

L'uva viene raccolta rigorosamente a mano durante la prima decade di ottobre e messa a riposo in fruttaio su plateaux, a condizioni di temperatura e umidità controllate, per un periodo di 90 giorni. Dopo la diraspatura e la pigiatura l’uva subisce una macerazione a freddo per un periodo di 10 giorni per poi cominciare una fermentazione a temperatura controllata della durata di circa 7 giorni con frequenti rimontaggi e movimentazione del pigiato.
