The Passerina di Cingilia is a white wine made from pure Passerina, produced by Fabio Di Donato at the small Cingilia winery, in Cugnoli, on the hills of the province of Pescara. It comes from a vineyard of just 0.4 hectares, trained using the traditional Abruzzese pergola system, at approximately 250 metres above sea level on predominantly sandy soils of alluvial origin. A deliberately limited production of approximately 3,000 bottles, expressing one of Abruzzo’s most interesting native varieties.
The harvest takes place around late September. In the cellar, Cingilia takes a minimally interventionist approach: a few days before the harvest, the pied de cuve, using the naturally occurring yeasts on the grapes, and fermentation takes place at a controlled temperature. The wine then matures in stainless steel on fine lees, before being bottled, preserving its freshness and varietal identity.
In the glass, it is a white wine that is fresh, vibrant and savoury, marked by a pleasant freshness on the palate. Its aromatic profile evokes citrus fruits, green apple, white-fleshed fruit and delicate floral and herbal nuances, while on the palate, its mineral and saline character accompanies each sip, making it particularly smooth. Aging on fine lees adds greater texture without weighing down the wine.
It is an extremely versatile Passerina at the table, ideal as an aperitif and with fish appetizers, seafood first courses, grilled fish, crustaceans and molluscs. Its freshness also pairs well with vegetarian dishes, savoury pies and Mediterranean cuisine.
The Passerina Cingilia perfectly reflects the winery’s philosophy: showcasing exclusively native grape varieties, working in harmony with the vineyard’s natural balance and allowing the grapes and terroir to express themselves in the glass. L’uva, raccolta manualmente a fine settembre, viene trasportata in cantina dove subisce una leggera diraspatura seguita da una soffice pressatura con torchio tradizionale a vite. Il mosto ottenuto viene tempestivamente raffreddato (8-10 °C) e lasciato riposare per circa 24 ore, dopodiché, una volta separato dalle impurità depositatesi sul fondo, è pronto per la fermentazione, che avviene spontaneamente in acciaio senza l’utilizzo di lieviti selezionati e dura per circa 10/12 giorni.

Fresca, delicatamente profumata e piacevolmente sapida, la Passerina è un vino molto versatile a tavola. Si abbina perfettamente agli antipasti di pesce, ai primi piatti delicati, come pasta con verdure, risotti e piatti a base di pesce, ma anche a fritture di mare, crostacei e molluschi. Ottima con il pesce al forno o alla griglia e con le preparazioni a base di verdure. La sua freschezza la rende piacevole anche con formaggi freschi e poco stagionati e con i piatti della cucina abruzzese a base di pesce.
