A Amarone della Valpolicella DOCG that comes from a single territory and a production method designed to express the full depth of Valpolicella grapes.

We are in eastern Valpolicella, in the Illasi area, where Andrea Piubello cultivates the Monte Cereolo vineyards. Here, the vineyard lies at an altitude of approximately 150 metres, on soils rich in calcareous stones, with vines trained according to the traditional Pergola Veronese system. It is from these grapes that its Amarone is born.

The wine is made from Corvina, Corvinone and Rondinella. The grapes are harvested and left to dry for approximately 90 days in the drying room, naturally concentrating sugars, aromas and extract. After a brief pre-fermentation maceration, fermentation takes place in stainless steel. The wine then rests for 6 months on its fine lees before spending approximately 30 months in French and American oak tonneaux, subsequently completing its ageing in the bottle.

Appearance: intense, deep ruby red, almost impenetrable to light.

Nose: broad and enveloping, with aromas of ripe cherry, plum and dark fruit, accompanied by notes of dark chocolate and sweet spices such as cinnamon and black pepper. With evolution, deeper nuances of tobacco and wood emerge.

Palate: rich, full-bodied and velvety, with silky, well-integrated tannins. The concentration of ripe fruit is balanced by a good fresh component, while spicy and woody notes accompany a long, persistent finish.

It is an Amarone that finds its place alongside substantial dishes: braised meats, roasts, grilled meats, game and aged cheeses. But it is also a wine for contemplation, to be sipped slowly while following its evolution in the glass.

It impressed us because it manages to combine the power expected from an Amarone with a precise expression of the territory of Monte Cereolo, where the calcareous character of the soil and the work in the vineyards become an integral part of the wine.

Vinificazione

Le uve provengono da vigneti allevati a Pergola Veronese tradizionale, con rese contenute intorno ai 50-60 q/ha prima dell’appassimento. Dopo la raccolta manuale, i grappoli vengono posti in fruttaio per 90 giorni, con una perdita di peso del 30-40%. La fermentazione avviene lentamente in acciaio ad una temperatura di circa 24°C per un periodo di 20 giorni, con macerazione prolungata sulle bucce. Segue fermentazione malolattica completa.
