Valpolicella - Latium
The Valpolicella DOC by Ilatium is the sixth wine from a winery that never stops surprising — the same estate that produces the Soave Calle, the very rare Recioto di Soave Sette Dame, the Amarone Leon and the monumental Amarone Due Mori. The base Valpolicella is the starting point of the Ilatium quality pyramid, the wine that tells the Veronese territory with the simplicity and freshness that only a young artisan red can offer.
Ilatium produces this Valpolicella with the same philosophy that guides the entire range: respect for the territory, artisan care in the vineyard and the cellar, no concessions to industrial standardisation. The Corvina, Corvinone and Rondinella grapes come from estate-owned vineyards on the calcareous-clay soils of the Veronese Valpolicella, harvested at full ripeness and vinified with brief fermentation to preserve all the fresh and fruity character of the variety.
Stainless steel vinification and brief ageing guarantee an aromatic fragrance and an immediate drinkability that make this Valpolicella perfect for every occasion — from the everyday aperitivo to a meal with friends, from Friday night pizza to an impromptu dinner with company. On the nose it is fragrant and clean: fresh cherry, raspberry, blackberry, red flowers and a characteristic herbaceous note typical of quality young Corvina. On the palate it is light and fresh, with delicate tannins and a lively fresh acidity that makes it wonderfully easy to drink even slightly cool at 14-16°C.
A wine that does not aspire to be great — it aspires to be good every day. And it succeeds.
