Ca' del Monte is a small estate in the Valpolicella Classica that produces with an artisan approach respectful of the territory and local traditions. The Ripasso is born from the traditional Veronese method: the base Valpolicella Classico wine is refermented on the still-fresh, yeast-rich pomace of the freshly pressed Amarone, acquiring structure, body, additional tannins and an aromatic complexity that elevates it well beyond the simple Classico. The result is what Veronese people affectionately call "the little Amarone" — full, soft, with an aromatic depth that genuinely surprises for the price.
Vinification is traditional and respectful: fermentation on the Amarone pomace for several days, ageing in oak barrels for the time necessary to integrate the acquired structure. On the nose it is warm and inviting: ripe cherry, blackberry, plum, warm spice, light tobacco and a balsamic note of Veronese herbs. On the palate it is smooth and enveloping, with round and already well-integrated tannins, a glyceric sweetness that balances the structure, a lively fresh acidity and a persistent finish with notes of red fruit and spice.
